  • 2 garlic cloves minced

  • ¼ tsp black pepper

Mediterranean Salsa

  • 1 cup cherry tomatoes chopped
  • 1 cup Persian cucumbers diced
  • ½ cup red onion diced
  • ½ cup feta cheese crumbled
  • 2 tbsp fresh parsley or dill chopped
  • 1 tbsp olive oil
  • Juice of ½ lemon
  • Salt and pepper to taste

To Serve

  • 8 small flour or corn tortillas
  • ½ cup tzatziki sauce or Greek yogurt
  • Optional: Kalamata olives hummus

Instructions
 

Marinate Chicken

  • Whisk olive oil, lemon juice, garlic, oregano, paprika, salt, and pepper. Add chicken chunks and marinate 10-15 minutes.

Cook Chicken

  • Heat a skillet over medium-high. Cook chicken 3-4 minutes per side until golden and cooked through (165°F internal). Set aside.

Make Salsa

  • Toss tomatoes, cucumbers, onion, feta, parsley, olive oil, lemon juice, salt, and pepper in a bowl.

Assemble Tacos

  • Warm tortillas. Fill with chicken, salsa, and tzatziki. Serve immediately with lemon wedges.
