For the Stir-Fry:
- 250 g boneless chicken breast thinly sliced
- 2 tablespoons vegetable oil
- 1 medium carrot julienned
- 1/2 cup shredded cabbage
- 1/2 red bell pepper thinly sliced
- 2 spring onions chopped
- 200 g chow mein noodles or egg noodles, cooked and drained
For the Sauce:
- 3 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 tablespoon sesame oil
- 1 teaspoon freshly grated ginger
- 2 garlic cloves minced
- 1 teaspoon cornstarch mixed with 2 tablespoons water for thickening
- Optional: 1/2 teaspoon chili flakes for a spicy kick
Prepare the Sauce:
In a small bowl, mix together soy sauce, oyster sauce, sesame oil, ginger, garlic, and the cornstarch slurry. Set aside.
Stir-Fry the Vegetables:
