- 1 block 200g feta cheese
- 500 g cherry tomatoes
- 3 cloves garlic minced
- 300 g pasta penne, fusilli, or rigatoni
- 60 ml extra-virgin olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried basil optional
- ½ teaspoon chili flakes optional
- Salt and pepper to taste
- Fresh basil leaves for garnish
Preheat the oven to 200°C (400°F).
Prepare the baking dish: In a large baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and minced garlic.
Season: Drizzle olive oil over the feta and tomatoes. Sprinkle with oregano, dried basil, chili flakes, salt, and pepper.
Bake: Bake uncovered for 30–35 minutes, until the tomatoes are bursting and the feta is golden and soft.
Cook the pasta: While the feta is baking, cook the pasta according to package instructions. Drain and reserve ½ cup of pasta water.
Combine: Once the feta is baked, mash the cheese and tomatoes together with a spoon to create a creamy sauce. Add the cooked pasta and a splash of reserved pasta water. Toss to combine thoroughly.
Serve: Garnish with fresh basil leaves and enjoy warm.
