Ingrédients
  

  • 1 block 200g feta cheese
  • 500 g cherry tomatoes
  • 3 cloves garlic minced
  • 300 g pasta penne, fusilli, or rigatoni
  • 60 ml extra-virgin olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil optional
  • ½ teaspoon chili flakes optional
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions
 

  • Preheat the oven to 200°C (400°F).
  • Prepare the baking dish: In a large baking dish, place the block of feta cheese in the center. Surround it with cherry tomatoes and minced garlic.
  • Season: Drizzle olive oil over the feta and tomatoes. Sprinkle with oregano, dried basil, chili flakes, salt, and pepper.
  • Bake: Bake uncovered for 30–35 minutes, until the tomatoes are bursting and the feta is golden and soft.
  • Cook the pasta: While the feta is baking, cook the pasta according to package instructions. Drain and reserve ½ cup of pasta water.
  • Combine: Once the feta is baked, mash the cheese and tomatoes together with a spoon to create a creamy sauce. Add the cooked pasta and a splash of reserved pasta water. Toss to combine thoroughly.
  • Serve: Garnish with fresh basil leaves and enjoy warm.
