Ingredients
  

Chicken & Marinade:

  • 4 boneless skinless chicken breasts 6-8 oz each
  • cup balsamic vinegar
  • ¼ cup extra virgin olive oil
  • 2 tbsp honey
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • ¾ tsp salt
  • ½ tsp black pepper

Topping:

  • 1 pint cherry tomatoes halved
  • 4 slices fresh mozzarella cheese ¾-inch thick
  • Fresh basil leaves for garnish

Instructions
 

  • Marinate: Whisk balsamic vinegar, olive oil, honey, garlic, Italian seasoning, salt, pepper. Add chicken breasts, marinate 15-30 minutes.
  • Prep: Preheat oven 400°F (200°C). Grease 9x13 baking dish.
  • Bake: Arrange marinated chicken in dish. Scatter tomatoes around. Bake 20 minutes.
  • Cheese: Top each breast with mozzarella slice. Bake 5-7 minutes until 165°F and cheese bubbles.
  • Serve: Rest 5 minutes. Spoon pan juices over chicken, garnish with basil.
