- 4 cups low-sodium vegetable broth plus more as needed

- 1/2 cup heavy cream
- 4 cups broccoli florets cut into bite-sized pieces
- 8 dry lasagna noodles broken into bite-sized pieces
- 1/2 teaspoon salt plus more to taste

- 2 cups freshly shredded sharp cheddar cheese
- 1/2 cup freshly grated Parmesan cheese

Melt the butter in a large Dutch oven or heavy soup pot over medium heat.
Add the diced onion and cook for 4 to 5 minutes, stirring occasionally, until softened and translucent.
Add the garlic and Italian seasoning. Cook for 30 seconds to 1 minute, until fragrant.
Sprinkle the flour over the onion mixture. Stir continuously for 1 to 2 minutes to form a roux and cook out the raw flour taste.
Slowly whisk in the vegetable broth until smooth. Add the whole milk and heavy cream, whisking until fully combined.
Bring the soup to a gentle simmer. Add the broccoli florets, broken lasagna noodles, salt, and black pepper. Stir well.
Simmer for 12 to 15 minutes, stirring every few minutes, until the pasta is tender and the broccoli is fork-tender. Add a splash of extra broth if the soup becomes too thick.
Turn off the heat and let the soup rest for 1 to 2 minutes. Add the cheddar and Parmesan a handful at a time, stirring gently until melted and smooth.
Taste and adjust the seasoning. Serve hot with extra cheddar, Parmesan, parsley, red pepper flakes, or garlic bread if desired.
