For the Crispy Chicken:
- 2 large chicken breasts sliced into cutlets
- 1 cup breadcrumbs or panko
- ½ cup grated parmesan cheese
- 1 tsp garlic powder
- 1 tsp paprika
- 2 eggs beaten
- Salt & pepper to taste
- 2 tbsp olive oil for frying or brushing if baking
For the Salad:
- 1 large head of romaine lettuce chopped
- 1 cup croutons homemade or store-bought
- ½ cup shaved parmesan cheese
- 1 cup cherry tomatoes optional, halved
- 1 avocado optional, sliced
For the Caesar Dressing (Homemade Option):
- ½ cup Greek yogurt or mayonnaise
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 tsp Dijon mustard
- 2 garlic cloves minced
- 1 tsp Worcestershire sauce
- 2 tbsp grated parmesan cheese
- ½ tsp anchovy paste optional, for authentic flavor
- Salt & pepper to taste
Step 1 – Prepare the Crispy Chicken:
In a bowl, combine breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper.
Dip chicken cutlets into beaten eggs, then coat in breadcrumb mixture.
Heat olive oil in a pan over medium heat and cook chicken until golden brown and crispy (about 4–5 minutes per side). Alternatively, bake at 200°C (400°F) for 18–20 minutes.
Step 2 – Make the Caesar Dressing:
In a small bowl, whisk together Greek yogurt (or mayo), olive oil, lemon juice, Dijon mustard, garlic, Worcestershire sauce, and parmesan.
Add anchovy paste if using, season with salt and pepper, and mix until smooth.
Step 3 – Assemble the Salad:
In a large salad bowl, toss romaine lettuce with half of the dressing.
Slice crispy chicken and place on top of the lettuce.
Add croutons, shaved parmesan, and optional toppings like cherry tomatoes or avocado.
Drizzle remaining dressing over the salad.
