Chicken Caesar Salad with Crispy Chicken

Ingredients
  

For the Crispy Chicken:

  • 2 large chicken breasts sliced into cutlets
  • 1 cup breadcrumbs or panko
  • ½ cup grated parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 2 eggs beaten
  • Salt & pepper to taste
  • 2 tbsp olive oil for frying or brushing if baking

For the Salad:

  • 1 large head of romaine lettuce chopped
  • 1 cup croutons homemade or store-bought
  • ½ cup shaved parmesan cheese
  • 1 cup cherry tomatoes optional, halved
  • 1 avocado optional, sliced

For the Caesar Dressing (Homemade Option):

  • ½ cup Greek yogurt or mayonnaise
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 2 garlic cloves minced
  • 1 tsp Worcestershire sauce
  • 2 tbsp grated parmesan cheese
  • ½ tsp anchovy paste optional, for authentic flavor
  • Salt & pepper to taste

Instructions
 

Step 1 – Prepare the Crispy Chicken:

  • In a bowl, combine breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper.
  • Dip chicken cutlets into beaten eggs, then coat in breadcrumb mixture.
  • Heat olive oil in a pan over medium heat and cook chicken until golden brown and crispy (about 4–5 minutes per side). Alternatively, bake at 200°C (400°F) for 18–20 minutes.

Step 2 – Make the Caesar Dressing:

  • In a small bowl, whisk together Greek yogurt (or mayo), olive oil, lemon juice, Dijon mustard, garlic, Worcestershire sauce, and parmesan.
  • Add anchovy paste if using, season with salt and pepper, and mix until smooth.

Step 3 – Assemble the Salad:

  • In a large salad bowl, toss romaine lettuce with half of the dressing.
  • Slice crispy chicken and place on top of the lettuce.
  • Add croutons, shaved parmesan, and optional toppings like cherry tomatoes or avocado.
  • Drizzle remaining dressing over the salad.

Step 4 – Serve:

  • Serve immediately while the chicken is crispy. Best enjoyed fresh!
