Chocolate Chip Banana Bars

Soft and moist chocolate chip banana bars made with ripe mashed bananas, brown sugar, and semisweet chocolate chips. A simple one-bowl recipe for snacks, breakfast, or dessert.

Ingredients
  

  • 3 very ripe medium bananas mashed
  • 1/2 cup unsalted butter melted
  • 3/4 cup packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup semisweet chocolate chips divided
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or pecans optional

Instructions
 

  • Preheat the oven to 350°F. Line an 8-by-8-inch baking pan with parchment paper.
  • In a large bowl, mash the bananas. Whisk in the melted butter, brown sugar, egg, and vanilla.
  • Add the flour, baking soda, salt, and cinnamon if using. Stir just until combined.
  • Fold in 1/2 cup chocolate chips and the nuts if using.
  • Spread the batter evenly in the prepared pan. Sprinkle the remaining chocolate chips over the top.
  • Bake for 22 to 27 minutes, until the center is set and a toothpick comes out with a few moist crumbs.
  • Cool completely before lifting from the pan and slicing into 12 bars.

Notes

Use bananas with plenty of brown spots for the sweetest flavor and moistest texture. Do not overmix the batter after adding flour.
