Discada Recipe: Flavorful Mexican Cowboy Dish

Ingrédients
  

  • 200g Bacon: diced
  • 250g Chorizo: sliced or crumbled
  • 300g Ground beef
  • 2–3 Hot dogs: sliced into thin rounds
  • 1 large White onion: diced
  • 2 medium Bell peppers 1 red, 1 green; diced
  • 3 medium Tomatoes: diced
  • 1–2 Jalapeño peppers: finely chopped, optional for heat
  • 1 cup Corn kernels: fresh or canned, drained
  • 3 cloves Garlic: minced
  • 2–3 tablespoons Oil or lard for cooking
  • 1 teaspoon Cumin powder
  • 1 teaspoon Oregano
  • Salt and pepper To taste
  • 1 cup Beer optional, for flavor
  • 2 tbsp Fresh cilantro chopped, for garnish
  • Corn or flour tortillas: For serving
  • Lime wedges: Optional for squeezing over the dish

Instructions
 

Prepare the Ingredients:

  • Dice and slice the proteins (bacon, chorizo, pork shoulder, ground beef, and hot dogs).
  • Chop the vegetables (onion, bell peppers, tomatoes, jalapeños, and garlic).

Heat the Cooking Pan:

  • Heat a disco (or a large skillet) over medium-high heat. Add a splash of oil or lard to prevent sticking.

Cook the Proteins:

  • Start with the bacon, rendering the fat until crispy.
  • Add the chorizo and cook until fragrant.
  • Stir in the ground beef and pork, cooking until browned.
  • Finally, toss in the hot dog slices and cook for 2–3 minutes.

Sauté the Vegetables:

  • Push the cooked proteins to the side of the pan. Add onions, bell peppers, and jalapeños to the center and sauté until softened.
  • Mix in the garlic and cook briefly until aromatic.

Combine and Season:

  • Stir the cooked proteins and vegetables together.
  • Add tomatoes, corn, cumin, oregano, salt, and pepper. Mix well.
  • Pour in the beer (optional) and let it simmer for 15–20 minutes to meld the flavors.

Garnish and Serve:

  • Sprinkle fresh cilantro over the top.
  • Serve hot with warm tortillas, lime wedges, or your favorite sides like rice or beans.
