Easy Cheeseburger Skulls

Spooky Halloween cheeseburger hand pies made with seasoned ground beef, cheddar cheese, and pizza dough baked in a skull-shaped mold.

Ingredients
  

For the Cheeseburger Filling

  • 1 1/2 pounds ground beef preferably 80/20 or 85/15
  • 1 tablespoon ketchup
  • 1 teaspoon yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup finely chopped dill pickles optional

For the Skull Hand Pies

  • 2 tubes refrigerated pizza dough about 13 to 14 ounces each
  • Nonstick cooking spray or oil for the skull mold
  • 1 large egg
  • 1 tablespoon water
  • Ketchup mustard, pickles, and burger sauce, for serving

Instructions
 

  • Preheat the oven to 375°F / 190°C. Lightly grease a 6-cavity silicone skull mold with nonstick spray or oil. Place the mold on a rimmed baking sheet.
  • Heat a large skillet over medium-high heat. Add ground beef and cook, breaking it apart with a spatula, until browned and fully cooked.
  • Drain excess grease from the skillet. Add ketchup, yellow mustard, Worcestershire sauce, onion powder, garlic powder, smoked paprika, salt, and black pepper.
  • Stir and cook for 1 to 2 minutes, until the beef is evenly coated in the seasonings.
  • Remove the skillet from heat. Stir in shredded cheddar cheese and chopped dill pickles, if using. Let the mixture cool for 5 to 10 minutes.
  • Unroll the pizza dough on a lightly floured surface. Cut the dough into 6 large squares or rectangles.
  • Press one piece of dough into each skull cavity, gently pressing it into the facial details while leaving enough dough around the edge to fold over the filling.
  • Spoon about 1/3 cup cheeseburger filling into each cavity. Keep the filling away from the edges.
  • Fold the overhanging dough over the filling. Pinch and seal the seams tightly to enclose the cheeseburger mixture.
  • In a small bowl, whisk the egg and water. Brush the dough lightly with egg wash.
  • Bake for 25 to 30 minutes, until the dough is golden brown and the filling is hot.
  • Let the cheeseburger skulls rest in the mold for 5 to 10 minutes. Carefully invert the mold onto a platter and gently release the skulls.
  • Serve warm with ketchup, mustard, pickles, or your favorite burger sauce.

Notes

  • Food safety: Ground beef must reach 160°F / 71°C. Use a food thermometer to verify doneness.usda+1
  • Skull mold: A flexible, food-safe silicone skull mold with 6 large cavities works best.
  • Pizza dough: Refrigerated pizza dough is easy to stretch and seal. Refrigerated pie crust can be used for a flakier shell.
  • Avoid leaks: Drain the cooked beef, cool the filling briefly, do not overfill the cavities, and seal dough edges tightly.
  • Cheese options: Substitute American cheese, Colby Jack, Monterey Jack, pepper jack, or mozzarella for cheddar.
  • Make ahead: Prepare the cooked beef filling up to 1 day ahead. Refrigerate, then assemble and bake the skulls before serving.
  • Storage: Refrigerate leftovers within 2 hours and eat within 3 to 4 days.
  • Reheating: Reheat in a 350°F / 175°C oven or air fryer until hot throughout. This keeps the crust crisper than microwaving.
  • Serving size: Serve 1 skull per person for a party with many dishes, or 2 skulls per person for a full Halloween dinner.
