Ingredients
  

For the Enchilada Bowls

  • 1 pound cooked shredded chicken breast or rotisserie chicken.
  • 2 cups cooked white rice brown rice, or cauliflower rice.
  • 1 cup canned black beans rinsed and drained.
  • 1 cup corn drained.
  • 1 red bell pepper diced.
  • 1 cup shredded Mexican cheese blend or cheddar cheese.

For the Cottage Cheese Enchilada Sauce

  • 1 cup cottage cheese.
  • 1 cup red enchilada sauce.
  • 1 teaspoon taco seasoning.
  • ½ teaspoon garlic powder.
  • ½ teaspoon ground cumin.
  • Salt and black pepper to taste.

Optional Toppings

  • Fresh cilantro.
  • Diced avocado.
  • Sliced jalapeños.
  • Chopped green onions.
  • Sour cream or Greek yogurt.
  • Pico de gallo or salsa.
  • Fresh lime wedges.
  • Hot sauce.

Instructions
 

  • Prepare the cooked chicken by shredding it into bite-sized pieces. If using rotisserie chicken, remove the skin and bones before shredding.
  • Rinse and drain the black beans. Drain the corn and dice the red bell pepper.
  • Add the cottage cheese, enchilada sauce, taco seasoning, garlic powder, cumin, salt, and black pepper to a blender or food processor.
  • Blend the sauce for 30–60 seconds, or until smooth and creamy.
  • Place the cooked chicken in a large bowl. Pour the blended cottage cheese enchilada sauce over the chicken and stir until well coated.
  • Divide the cooked rice or cauliflower rice between four bowls.
  • Add the saucy chicken, black beans, corn, and diced bell pepper to each bowl.
  • Sprinkle the shredded cheese over the top of each bowl.
  • Microwave the bowls until hot and the cheese has melted, or transfer them to an oven-safe baking dish and bake at 375°F (190°C) until warm and bubbly.
  • Garnish with cilantro, avocado, jalapeños, salsa, sour cream, or a squeeze of lime. Serve warm.
