For the Enchilada Bowls
- 1 pound cooked shredded chicken breast or rotisserie chicken.
- 2 cups cooked white rice brown rice, or cauliflower rice.
- 1 cup canned black beans rinsed and drained.
- 1 cup corn drained.
- 1 red bell pepper diced.
- 1 cup shredded Mexican cheese blend or cheddar cheese.
For the Cottage Cheese Enchilada Sauce
- 1 cup cottage cheese.
- 1 cup red enchilada sauce.
- 1 teaspoon taco seasoning.
- ½ teaspoon garlic powder.
- ½ teaspoon ground cumin.
- Salt and black pepper to taste.
Optional Toppings
- Fresh cilantro.
- Diced avocado.
- Sliced jalapeños.
- Chopped green onions.
- Sour cream or Greek yogurt.
- Pico de gallo or salsa.
- Fresh lime wedges.
- Hot sauce.
Prepare the cooked chicken by shredding it into bite-sized pieces. If using rotisserie chicken, remove the skin and bones before shredding.
Rinse and drain the black beans. Drain the corn and dice the red bell pepper.
Add the cottage cheese, enchilada sauce, taco seasoning, garlic powder, cumin, salt, and black pepper to a blender or food processor.
Blend the sauce for 30–60 seconds, or until smooth and creamy.
Place the cooked chicken in a large bowl. Pour the blended cottage cheese enchilada sauce over the chicken and stir until well coated.
Divide the cooked rice or cauliflower rice between four bowls.
Add the saucy chicken, black beans, corn, and diced bell pepper to each bowl.
Sprinkle the shredded cheese over the top of each bowl.
Microwave the bowls until hot and the cheese has melted, or transfer them to an oven-safe baking dish and bake at 375°F (190°C) until warm and bubbly.
Garnish with cilantro, avocado, jalapeños, salsa, sour cream, or a squeeze of lime. Serve warm.
