This Easy Crockpot Black Bean Soup with Lime and Cilantro is a hearty, budget-friendly slow cooker meal made with black beans, tomatoes, vegetables, garlic, cumin, chili powder, and vegetable broth. Fresh lime juice and cilantro are added at the end for a bright, flavorful finish.

Ingredients
  

For the Soup

  • 3 cans 15 ounces each, black beans, drained and rinsed
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 1 medium red bell pepper diced
  • 2 medium carrots peeled and diced
  • 2 celery stalks diced
  • 1 jalapeño seeded and finely chopped, optional
  • 1 can 14.5 ounces, diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 tablespoons tomato paste
  • teaspoons ground cumin
  • 1 teaspoon chili powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper
  • 1 tablespoon olive oil optional
  • 2 tablespoons fresh lime juice

For Garnish

  • ¼ cup fresh cilantro chopped
  • Lime wedges
  • Diced avocado
  • Sliced jalapeño
  • Diced red onion
  • Tortilla strips or crushed tortilla chips
  • Sour cream or Greek yogurt
  • Shredded cheddar or Monterey Jack cheese
  • Hot sauce optional

Instructions
 

  • Drain and rinse the canned black beans. Set them aside while you prepare the vegetables.
  • Dice the onion, bell pepper, carrots, and celery. Mince the garlic and finely chop the jalapeño, if using.
  • Add the black beans, onion, bell pepper, carrots, celery, garlic, jalapeño, diced tomatoes, vegetable broth, and tomato paste to the slow cooker.
  • Add the ground cumin, chili powder, smoked paprika, dried oregano, salt, black pepper, and olive oil, if using.
  • Stir the ingredients gently until the beans, vegetables, broth, and seasonings are well combined.
  • Cover the slow cooker and cook on LOW for 4–6 hours or HIGH for 2–3 hours, until the vegetables are tender and the flavors have blended.
  • For a thicker soup, use an immersion blender to partially blend the soup directly in the slow cooker. Leave some beans and vegetables whole for texture.
  • Alternatively, transfer 1–2 cups of the soup to a blender, blend carefully, and return it to the slow cooker.
  • Stir in the fresh lime juice after cooking.
  • Taste the soup and adjust the salt, pepper, chili powder, or lime juice as needed.
  • Stir in some of the chopped cilantro or reserve it for garnish.
  • Ladle the soup into bowls and top with fresh cilantro, avocado, lime wedges, diced onion, tortilla strips, sour cream, cheese, or hot sauce.
  • Serve hot with warm tortillas, cornbread, rice, tortilla chips, or a simple green salad.

Notes

  • Using dried beans: Use a separate tested method because dried beans require soaking and longer cooking.
  • For a vegan version: Use vegetable broth and omit sour cream and dairy-based cheese, or use plant-based alternatives.
  • For a smoother soup: Blend a larger portion of the soup with an immersion blender.
  • For a chunkier soup: Blend only a small amount or mash a portion of the beans with a spoon.
  • For a spicier soup: Add extra jalapeño, chipotle peppers, cayenne pepper, red pepper flakes, or hot sauce.
  • For extra protein: Add cooked shredded chicken, turkey, or chorizo, but the recipe will no longer be vegetarian.
  • When to add lime and cilantro: Add both near the end of cooking to preserve their fresh flavor.
  • Storage: Cool leftovers and store them in an airtight container in the refrigerator. Keep toppings separate.
  • Freezing: Freeze the soup without avocado, sour cream, cilantro, or tortilla chips. Thaw and reheat gently.
  • Reheating: Warm on the stovetop or in the microwave. Add extra broth if the soup thickens.
