Ingredients
  

  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon Dijon mustard
  • 1 teaspoon apple cider vinegar or lemon juice
  • Salt to taste
  • Black pepper to taste
  • Paprika for garnish
  • 1 tablespoon finely chopped chives or parsley for garnish

Instructions
 

  • Place the eggs in a saucepan and cover with cold water.
  • Bring to a boil, then reduce the heat and simmer for about 10–12 minutes.
  • Transfer the eggs to an ice bath and let them cool completely.
  • Peel the eggs and slice them in half lengthwise.
  • Remove the yolks and place them in a bowl.
  • Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
