- 6 large eggs
- 3 tablespoons mayonnaise
- 1 teaspoon Dijon mustard
- 1 teaspoon apple cider vinegar or lemon juice
- Salt to taste
- Black pepper to taste
- Paprika for garnish
- 1 tablespoon finely chopped chives or parsley for garnish
Place the eggs in a saucepan and cover with cold water.
Bring to a boil, then reduce the heat and simmer for about 10–12 minutes.
Transfer the eggs to an ice bath and let them cool completely.
Peel the eggs and slice them in half lengthwise.
Remove the yolks and place them in a bowl.
Mash the yolks with mayonnaise, mustard, vinegar, salt, and pepper until smooth and creamy.
