For the Vanilla Cake (two 8‑inch / 20 cm layers)
- 2 ½ cups 315 g all‑purpose flour
- 2 ½ tsp baking powder
- ½ tsp salt
- ¾ cup 170 g unsalted butter, softened
- 1 ¼ cups 250 g granulated sugar
- 4 large eggs room temperature
- 1 tbsp vanilla extract
- 1 cup 240 ml whole milk or buttermilk, room temperature
Optional flavor variations (choose one):
- Chocolate: Replace ½ cup 60 g flour with ½ cup (40 g) unsweetened cocoa powder; add ½ cup (120 ml) hot coffee to the milk.
- Orange‑chocolate: Add zest of 1 orange + 1 tsp orange extract to the batter; use orange juice for half of the milk.
For the Vanilla Buttercream Frosting
- 1 cup 225 g unsalted butter, softened
- 4 –5 cups 480–600 g powdered sugar, sifted
- 2 –3 tbsp heavy cream or milk
- 1 –2 tsp vanilla extract
- Pinch of salt
For the Gold Drip (optional but very “Leo”)
- ¾ cup 130 g white chocolate chips or chopped white chocolate
- ¼ cup 60 ml heavy cream
- ½ –1 tsp edible gold luster dust or gold gel food coloring
For Zodiac Decor (choose what you like)
- Edible gold leaf flakes or edible glitter
- Fondant or store‑bought lion/crown/constellation cake topper
- Small fondant stars or edible star sprinkles
- Gel food coloring in gold orange, and red (optional)
Prep pans and oven
Preheat oven to 350°F (175°C).
Grease two 8‑inch (20 cm) round cake pans, line bottoms with parchment paper, and lightly grease again.
Add eggs and vanilla
Add eggs one at a time, mixing well after each addition.
Mix in vanilla extract (and orange extract, if using).
Combine wet and dry
With mixer on low, add flour mixture and milk in 3 additions:

Mix just until combined; do not overmix. If making chocolate or orange‑chocolate version, fold in cocoa/coffee or orange elements now.
Bake the layers
Divide batter evenly between prepared pans (smooth tops with a spatula).
Bake 30–35 minutes, until a toothpick inserted in the center comes out clean or with a few moist crumbs.
Cool in pans 10 minutes, then turn out onto a wire rack to cool completely before frosting.
Make the buttercream
Beat softened butter until creamy (about 2 minutes).
Gradually add powdered sugar, 1 cup at a time, on low speed.
Add cream/milk, vanilla, and salt; whip on medium‑high for 2–3 minutes until light and spreadable. Adjust consistency with more sugar (thicker) or cream (thinner).
Assemble the cake
Level cake tops if needed with a serrated knife.
Place one layer on a cake board or plate; spread a layer of buttercream on top. Add any filling (ganache, jam, caramel) if desired.
Top with second layer; apply a thin crumb coat of buttercream all over. Chill 15–20 minutes.
Apply a final, smooth layer of buttercream. Use an offset spatula or bench scraper for clean sides.
Create the gold drip (optional)
Heat cream until just simmering; pour over white chocolate in a heatproof bowl. Let sit 1–2 minutes, then stir until smooth.
Mix in gold luster dust or gold gel until you have a rich, metallic color.
Let cool slightly until thick but still pourable.
Spoon around the top edge so it drips naturally down the sides. Let set before adding toppers.
Add zodiac decor
Press gold leaf flakes or sprinkle edible glitter lightly over the sides/top.
Add your chosen topper: lion, crown, or “Leo” script.
For a constellation effect, place small fondant stars on top and connect with thin lines of black or gold icing.
If desired, pipe “Happy Birthday Leo” or the birthday person’s name on top.
Chill, serve, and store
Chill cake 20–30 minutes before slicing for neat layers.
Store covered at room temperature up to 2 days or in the fridge up to 5 days. Let come to room temperature 30–60 minutes before serving for best texture.
