Ingredients
  

For the Breakfast Bowl:

  • 4 cups frozen tater tots
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 2 tablespoons chopped green onions optional, for garnish

For the Sausage Gravy:

  • 1/2 pound ground breakfast sausage
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/4 teaspoon freshly ground black pepper more to taste
  • Salt to taste
  • Optional: pinch of paprika or cayenne for added flavor

Instructions
 

Bake the Tater Tots:

  • Preheat oven to 425°F (220°C). Spread frozen tater tots on a baking sheet and bake according to package instructions (usually 20–25 minutes), until golden and crispy.

Cook the Sausage Gravy:

  • In a skillet over medium heat, cook the ground sausage until browned and fully cooked. Do not drain. Sprinkle the flour over the sausage and stir well to coat. Gradually pour in the milk while whisking constantly. Bring to a simmer and cook for 4–5 minutes, stirring, until thickened. Season with pepper and salt to taste.

Scramble the Eggs:

  • In a separate pan, scramble the eggs to your desired doneness. Lightly season with salt and pepper.

Assemble the Bowls:

  • Divide the crispy tater tots between 4 bowls. Top each with scrambled eggs, shredded cheddar cheese, and a generous ladle of sausage gravy.

Garnish and Serve:

  • Sprinkle chopped green onions on top and serve hot. Optional: add a dash of hot sauce for a spicy kick.
