For the Cake Base:
- 1 box Funfetti cake mix or vanilla cake mix
- 3 large eggs
- 1 cup water
- 1/2 cup vegetable oil
- 1/3 cup rainbow sprinkles if using vanilla cake mix
For the Filling:
- 1 box 3.4 oz instant vanilla pudding mix
- 2 cups cold milk
For the Topping:
- 1 tub 8 oz Cool Whip (or homemade whipped cream)
- 1/4 cup rainbow sprinkles for garnish
Optional Add-ins:
- Sweetened condensed milk for extra richness
- White chocolate chips or shavings
- Sliced strawberries or crushed cookies
Bake the Cake:
Preheat your oven to 350°F (175°C). Prepare the Funfetti cake mix according to package instructions using eggs, water, and oil. Pour into a greased 9x13-inch baking dish and bake for 25–30 minutes or until a toothpick inserted in the center comes out clean. Let it cool for 15–20 minutes.
Add the Pudding Layer:
In a mixing bowl, whisk the vanilla pudding mix with cold milk. Let it sit for 1–2 minutes until slightly thickened, then pour it evenly over the cake, gently spreading it to fill all the holes. Refrigerate for at least 1 hour to set.
Top and Decorate:
Once the pudding layer is firm, spread whipped topping evenly over the cake. Sprinkle rainbow sprinkles on top for decoration. You can also add extra toppings like white chocolate, cookies, or fruit.
