Ingredients
  

  • 1.5 lbs beef cut into bite-sized pieces
  • 1.5 lbs potatoes diced
  • 4 tablespoons garlic minced
  • 1/2 cup unsalted butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (optional)

Instructions
 

  • In a slow cooker, combine the beef, diced potatoes, minced garlic, salt, and pepper.
  • Melt the butter and pour it over the beef and potatoes.
  • Stir to combine all the ingredients well.
  • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender and potatoes are cooked through.
  • Garnish with chopped parsley before serving, if desired.
