- 1.5 lb beef sirloin cut into bite-sized cubes.
- 1.5 lb baby potatoes halved.
- 3 tbsp olive oil.
- 4 tbsp unsalted butter.
- 5 cloves garlic minced.
- 1 tsp salt.
- 1/2 tsp black pepper.
- 1 tsp paprika.
- 1 tsp dried parsley or 2 tbsp fresh parsley chopped.
- 1/2 tsp dried thyme optional.
Wash and cut the potatoes in half, then season them with salt, pepper, paprika, and 1 tablespoon of olive oil.
Heat a large skillet over medium heat and cook the potatoes until golden and tender, stirring occasionally.
Remove the potatoes from the skillet and set them aside.
Add the remaining olive oil to the skillet, then sear the beef bites until browned on all sides.
Reduce the heat, add the butter and minced garlic, and stir until fragrant.
Return the potatoes to the skillet and toss everything together so the beef is coated in garlic butter.
Sprinkle with parsley and serve hot.
