Ingredients
  

  • 8 slices sandwich bread white, whole wheat, sourdough, brioche, or Hawaiian rolls
  • 8 slices cheese cheddar, American, mozzarella, Monterey Jack, or Colby Jack
  • 2 –3 tablespoons butter softened (or 1 tablespoon butter + 1 tablespoon mayonnaise for extra crispiness)

Optional fillings:

  • 4 –8 slices deli ham
  • 4 –8 slices cooked bacon
  • 16 –24 pepperoni slices
  • 4 –8 thin tomato slices pat dry
  • 1 cup fresh spinach leaves
  • 2 –4 tablespoons sliced jalapeenos fresh or pickled
  • 2 –4 tablespoons pesto or marinara sauce

Optional dipping sauces:

  • Marinara sauce
  • Tomato soup
  • Ranch dressing
  • Garlic aioli
  • Ketchup

Instructions
 

  • Trim the crusts: Use a sharp knife to remove all four crusts from each bread slice.
  • Flatten the bread: Place each slice on a cutting board and roll with a rolling pin until very thin (about 1/8-inch thick). This helps the bread roll tightly and crisp evenly.
  • Add cheese and fillings: Place one cheese slice (or 2–3 tablespoons shredded cheese) on each flattened bread slice. Add optional fillings like ham, bacon, pepperoni, tomato, spinach, or jalapeenos as desired.
  • Roll tightly: Starting from one short end, roll the bread tightly around the filling, seam-side down. If needed, secure with a toothpick to prevent unraveling during cooking.
  • Butter all sides: Brush or spread softened butter (or a butter-mayonnaise mixture) on all sides of each roll-up. This ensures even browning and maximum crispness.
  • Cook in a skillet: Heat a skillet or nonstick pan over medium heat. Place roll-ups seam-side down in the pan. Cook, turning every 1–2 minutes, until all sides are golden brown and crispy (about 6–8 minutes total).
  • Cool slightly and slice: Remove from the pan and let cool for 1–2 minutes. Slice each roll-up into 2–3 pieces if desired. Serve warm with your favorite dipping sauces.

Notes

  • Best cheeses for melting: Cheddar, American, mozzarella, Monterey Jack, pepper jack, Swiss, Gouda, Colby Jack.
  • Prevent sogginess: Use low-moisture cheese and pat dry any wet fillings (like tomato slices) before rolling.
  • Make-ahead: Assemble roll-ups up to 24 hours in advance; wrap and refrigerate, then cook when ready.
  • Freezing: Freeze uncooked roll-ups individually wrapped for up to 2 months; cook from frozen, adding 3–4 minutes to cooking time.
  • Reheating: Reheat in a skillet over medium-low heat for best crispness (3–5 minutes), or in an air fryer at 350∞F (175∞C) for 3–4 minutes.
  • Mayo hack: Mix equal parts softened butter and mayonnaise for an ultra-crispy, golden exterior.
