Ingredients
  

Dry Ingredients

  • 1 cup whole wheat flour Make sure to spoon and level when measuring.
  • 1/2 cup almond flour
  • 1/4 cup coconut sugar Can adjust to taste.
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon Plus more for coating.

Wet Ingredients

  • 1/2 cup unsweetened applesauce
  • 1/2 cup almond milk Add more for a softer texture.
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix the whole wheat flour, almond flour, coconut sugar, baking powder, salt, and cinnamon together.
  • In another bowl, combine the applesauce, almond milk, melted coconut oil, and vanilla extract.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.
  • Use a spoon or cookie scoop to drop balls of dough onto the prepared baking sheet.

Baking

  • Bake for 15-20 minutes until golden brown.
  • Let cool slightly before serving.

Notes

Serve warm with a dusting of extra cinnamon sugar or a side of chocolate or caramel sauce. Store leftovers in an airtight container at room temperature for up to three days, in the refrigerator for a week, or freeze for up to three months.
