Homemade Strawberry Pop Tarts

Flaky, buttery homemade pop tarts filled with sweet strawberry jam and topped with a simple vanilla glaze and rainbow sprinkles. Better than store-bought and perfect for breakfast or dessert.

- 2 1/2 cups all-purpose flour
- 1 tablespoon granulated sugar
- 1/2 teaspoon salt
- 1 cup cold unsalted butter cubed
- 6-8 tablespoons ice water
- 1 cup strawberry jam or fresh strawberry filling
- 1 egg beaten (for egg wash)
- 2 cups powdered sugar
- 3-4 tablespoons milk
- 1 teaspoon vanilla extract
- Rainbow sprinkles optional
In a large bowl, combine flour, sugar, and salt. Cut in cold butter until mixture resembles coarse crumbs.
Add ice water one tablespoon at a time until dough comes together. Divide in half, wrap, and refrigerate 30 minutes.
Preheat oven to 375 degrees F. Roll out one dough disc to 1/8-inch thickness and cut into 3x5 inch rectangles.
Place half the rectangles on a parchment-lined baking sheet. Spoon filling onto centers, leaving a border.
Brush edges with water, top with remaining rectangles, and press edges to seal. Cut slits in tops.
Brush with egg wash and bake 15-20 minutes until golden. Cool completely.
Whisk together powdered sugar, milk, and vanilla for glaze. Drizzle over cooled pop tarts and add sprinkles.
