For the Dough (or use store-bought):
- 2 ¼ tsp active dry yeast
- 1 ½ cups warm water
- 3 ½ cups all-purpose flour
- 2 tbsp olive oil
- 1 tsp salt
- 1 tsp sugar
For the White Sauce:
- 2 tbsp olive oil or unsalted butter
- 4 cloves garlic minced
- 2 tbsp all-purpose flour
- 1 cup whole milk or heavy cream
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp dried oregano
- ¼ cup grated Parmesan cheese
For the Toppings:
- 1 cup ricotta cheese
- 1 ½ cups shredded mozzarella
- ½ cup shredded Parmesan
- 1 tsp dried basil or Italian seasoning
- Optional: sautéed mushrooms spinach, caramelized onions, arugula
Step 1: Prepare the Dough
In a bowl, mix warm water, yeast, and sugar. Let it sit for 5–10 minutes until foamy.
Add flour, olive oil, and salt. Mix and knead for 8–10 minutes until smooth.
Cover and let it rise in a warm place for 1 hour, or until doubled in size.
Step 2: Make the White Sauce
Heat olive oil or butter in a saucepan over medium heat.
Add minced garlic and cook for 1 minute until fragrant.
Stir in flour and cook for 1 minute to form a roux.
Gradually whisk in milk or cream until smooth.
Add salt, pepper, oregano, and Parmesan cheese. Simmer until thickened. Set aside.
Step 3: Assemble the Pizza
Preheat oven to 475°F (245°C). Place a pizza stone or baking sheet inside to heat.
Roll out the dough on a floured surface. Transfer to parchment paper.
Spread the white sauce evenly over the dough.
Add dollops of ricotta, then sprinkle mozzarella and Parmesan.
Add optional toppings and sprinkle with basil or Italian seasoning.
Step 4: Bake
Transfer the pizza (with parchment) onto the hot baking surface.
Bake for 12–15 minutes, or until crust is golden and cheese is bubbly.
Remove from oven, let cool for a few minutes, then slice and serve.
