- 4 cups sweet potatoes peeled and cubed
- 3 tablespoons honey
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: fresh chopped parsley for garnish
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, combine the cubed sweet potatoes, honey, olive oil, cinnamon, salt, and pepper. Toss until the sweet potatoes are evenly coated.
Spread the sweet potatoes out in a single layer on the prepared baking sheet.
Roast for 25–30 minutes, stirring halfway through, until the sweet potatoes are tender and caramelized.
Remove from the oven, garnish with chopped parsley if desired, and serve warm.
