Keto Cauliflower Fried Rice
Are you missing your fried rice? Cauliflower rice makes a fantastic low-carb substitute that’s light, filling, and versatile. This dish is packed with veggies and flavour but without the carbs of traditional rice.

- Ingredients
- One head of cauliflower riced
- 1 tbsp sesame oil
- 1/2 cup diced carrots and peas
- Two eggs whisked
- Three green onions sliced
- 1 tbsp soy sauce or coconut aminos
- Salt and pepper to taste
Heat sesame oil in a skillet over medium heat and add the carrots and peas.
Push the veggies to the side and pour the whisked eggs into the pan, scrambling until cooked.
Add cauliflower rice and soy sauce, stirring until everything is combined and heated.
Sprinkle with salt and pepper and top with chopped green onions.
