Preheat your oven to 200°C (390°F) or 180°C (350°F) fan-forced.
Line a baking tray with baking paper.
Mix the Ingredients:
In a large mixing bowl, sift self-raising flour and add a pinch of salt (optional).
Pour in lemonade and thickened cream.
Gently mix with a spatula or butter knife until just combined. Avoid overmixing to keep the dough light and fluffy.
Form the Dough:
Lightly flour a clean surface and transfer the dough onto it.
Knead the dough gently a few times until smooth.
Flatten it out to about 2–3 cm (1 inch) thick.
Cut Out Scones:
Use a round cutter (about 5 cm/2 inches in diameter) to cut out scones.
Place them close together on the prepared baking tray for a softer texture.
Bake the Scones:
Bake for 12–15 minutes or until the scones are golden on top.
Cool and Serve:
Transfer the scones to a wire rack to cool slightly.
Serve warm with jam and whipped cream for a perfect afternoon treat
