- 4 plain bagels halved (or everything, mini, whole wheat, gluten-free)
- 4 breakfast sausage links or patties cooked and crumbled
- 4 large eggs scrambled
- 1 cup shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- ½ cup pizza sauce or marinara
- ½ cup country white gravy Pioneer Brand or homemade
- 1 bell pepper diced (optional)
- ½ onion diced (optional)
- 2 green onions sliced (optional)
- Salt and pepper to taste
Preheat oven to 375°F (or air fryer to 350°F). Line a baking sheet with parchment paper or aluminum foil. Slice bagels in half horizontally and place them cut-side up on the prepared baking sheet.
While oven preheats, cook your protein. Cook breakfast sausage according to package directions, then chop into small pieces. Scramble eggs in a nonstick skillet over medium-low heat, stirring gently until just set. If using ham or Canadian bacon, dice and briefly sauté to warm through.
Spread 1-2 tablespoons of your chosen sauce (pizza sauce, country gravy, or marinara) on each bagel half. Top with cooked sausage, bacon, ham, or scrambled eggs. Sprinkle generously with shredded cheese. If adding veggies like diced peppers, onions, or spinach, add them now under the cheese.
Bake in preheated oven for 8-10 minutes, or until cheese is melted and bubbly and bagel edges are crispy. If using air fryer, cook at 350°F for 5-7 minutes, checking frequently to prevent burning. Let cool for 2-3 minutes before serving (cheese will be very hot).
