Ingredients
  

  • 1 bag 30-32 oz frozen shredded hash browns, thawed (or 12-16 frozen hash brown patties)
  • 2 cups diced ham honey baked, spiral ham, or deli ham
  • 2 cups shredded cheddar cheese
  • 2 cups shredded Monterey Jack cheese
  • 10 large eggs
  • 1 cup heavy cream or half and half
  • ½ cup whole milk
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp smoked paprika
  • ¼ tsp Dijon mustard optional
  • 1 bell pepper diced (optional)
  • ½ onion diced (optional)
  • 1 cup spinach chopped (optional)

Instructions
 

  • Preheat oven to 350°F. Grease a 9x13 inch baking dish with butter or cooking spray. If using frozen shredded hash browns, thaw completely and pat very dry with paper towels. Spread hash browns evenly in the bottom of the prepared baking dish. If using hash brown patties, arrange in a single layer to cover the bottom.
  • Sprinkle diced ham evenly over hash browns. If adding veggies (diced bell peppers, onions, spinach, mushrooms), sauté briefly first to soften, then scatter over ham. Sprinkle 1½ cups of shredded cheese over ham and veggies, reserving ½ cup for the top.
  • In a large bowl, whisk together eggs, heavy cream (or half and half), milk, salt, pepper, garlic powder, onion powder, smoked paprika, and Dijon mustard (if using) until well combined. Pour egg mixture evenly over hash browns, ham, and cheese in baking dish. Gently press down on hash browns with spatula to ensure they're submerged in egg mixture.
  • Bake for 45-55 minutes, or until top is golden brown and center is set (a knife inserted in center should come out clean, or internal temperature should reach 160°F). If top starts to brown too quickly, cover loosely with aluminum foil for last 15 minutes. Sprinkle reserved ½ cup cheese on top during last 5 minutes of baking. Let rest for 5-10 minutes before slicing and serving.
