Heat a large 12-inch skillet over medium-high heat. Add the breakfast sausage and cook for 6 to 8 minutes, breaking it into small pieces, until browned and cooked through. Transfer the sausage to a plate.
If the skillet is dry, add 1 tablespoon olive oil. Add diced sweet potatoes, smoked paprika, cinnamon, ½ teaspoon salt, black pepper, and red pepper flakes if using. Stir well.
Add water or chicken broth, cover the skillet, and cook for 6 to 8 minutes. Stir once halfway through.
Remove the lid. Continue cooking sweet potatoes for 6 to 8 minutes, stirring occasionally, until tender and golden around the edges.
Add the remaining olive oil if needed. Add diced bell pepper and onion. Cook for 4 to 5 minutes, until softened.
Add minced garlic and cook for 30 seconds, stirring constantly.
Return the browned sausage to the skillet. Drizzle maple syrup over the mixture and toss gently. Cook for 1 to 2 minutes until lightly glazed.
Taste and add the remaining salt if needed.
To add eggs, make four small wells in the hash. Crack one egg into each well. Cover the skillet and cook for 4 to 6 minutes, or until the egg whites are set and the eggs are cooked to your preference.
Garnish with herbs, avocado, cheese, hot sauce, salsa, or Greek yogurt. Serve immediately.
