- 4 large eggs
- 5 oz 140 g block feta cheese (or crumbled)
- 1 cup cherry tomatoes halved
- 1 handful fresh spinach optional
- 2 tbsp extra-virgin olive oil
- 1 tsp dried oregano or fresh herbs like parsley, basil
- Pinch red pepper flakes optional
- Salt and black pepper to taste
- Optional toppings: Kalamata olives fresh herbs
Preheat oven to 375°F (190°C). Lightly grease a small baking dish with olive oil.
Add feta cheese to the center of the dish. Arrange cherry tomatoes and spinach (if using) around the feta.
Drizzle with olive oil and sprinkle with oregano, red pepper flakes (if using), and a pinch of salt and pepper.
Make four small wells in the mixture and crack one egg into each well.
Bake for 10-15 minutes, until egg whites are just set but yolks remain runny, or to your preferred doneness.
Remove from oven and sprinkle with fresh herbs or olives if desired. Serve hot with toasted bread or salad.
