Mediterranean Baked Feta Eggs

Ingredients
  

  • 4 large eggs
  • 5 oz 140 g block feta cheese (or crumbled)
  • 1 cup cherry tomatoes halved
  • 1 handful fresh spinach optional
  • 2 tbsp extra-virgin olive oil
  • 1 tsp dried oregano or fresh herbs like parsley, basil
  • Pinch red pepper flakes optional
  • Salt and black pepper to taste
  • Optional toppings: Kalamata olives fresh herbs

Instructions
 

  • Preheat oven to 375°F (190°C). Lightly grease a small baking dish with olive oil.
  • Add feta cheese to the center of the dish. Arrange cherry tomatoes and spinach (if using) around the feta.
  • Drizzle with olive oil and sprinkle with oregano, red pepper flakes (if using), and a pinch of salt and pepper.
  • Make four small wells in the mixture and crack one egg into each well.
  • Bake for 10-15 minutes, until egg whites are just set but yolks remain runny, or to your preferred doneness.
  • Remove from oven and sprinkle with fresh herbs or olives if desired. Serve hot with toasted bread or salad.
