Ingredients
  

Meatballs:

  • lbs ground chicken breast/thigh mix
  • ½ cup feta cheese crumbles
  • ½ cup panko breadcrumbs
  • 1 egg
  • 3 cloves garlic minced
  • Zest of 1 lemon
  • ¼ cup fresh parsley chopped
  • 2 tsp dried oregano
  • 1 tsp salt
  • ½ tsp black pepper

Tzatziki & Serving:

  • 1 cup Greek yogurt
  • ½ cucumber grated & drained
  • 1 clove garlic minced
  • 1 tbsp lemon juice
  • 2 tbsp fresh dill chopped
  • Pita bread cherry tomatoes, olives for serving

Instructions
 

  • Preheat oven 400°F (200°C). Line baking sheet with parchment.
  • Mix ground chicken, feta, breadcrumbs, egg, garlic, lemon zest, parsley, oregano, salt, pepper.
  • Roll 1½-inch meatballs (20 total). Place on baking sheet.
  • Bake 18-22 minutes until golden and 165°F internal.
  • Tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, pinch salt.
  • Serve meatballs family-style with tzatziki, pita, chopped veggies.
