Meatballs:
- 1½ lbs ground chicken breast/thigh mix
- ½ cup feta cheese crumbles
- ½ cup panko breadcrumbs
- 1 egg
- 3 cloves garlic minced
- Zest of 1 lemon
- ¼ cup fresh parsley chopped
- 2 tsp dried oregano
- 1 tsp salt
- ½ tsp black pepper
Tzatziki & Serving:
- 1 cup Greek yogurt
- ½ cucumber grated & drained
- 1 clove garlic minced
- 1 tbsp lemon juice
- 2 tbsp fresh dill chopped
- Pita bread cherry tomatoes, olives for serving
Preheat oven 400°F (200°C). Line baking sheet with parchment.
Mix ground chicken, feta, breadcrumbs, egg, garlic, lemon zest, parsley, oregano, salt, pepper.
Roll 1½-inch meatballs (20 total). Place on baking sheet.
Bake 18-22 minutes until golden and 165°F internal.
Tzatziki: Mix Greek yogurt, grated cucumber, garlic, lemon juice, dill, pinch salt.
Serve meatballs family-style with tzatziki, pita, chopped veggies.
