- 2 cups cooked chickpeas
- 1 cucumber diced
- 1 bell pepper diced
- 1/4 cup Kalamata olives halved
- 1/4 cup red onion thinly sliced
- 1/4 cup fresh parsley chopped
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
Combine chickpeas, cucumber, bell pepper, olives, red onion, and parsley in a large bowl.
Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl to create the dressing.
Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
