Ingrédients
  

  • 2 cups cooked chickpeas
  • 1 cucumber diced
  • 1 bell pepper diced
  • 1/4 cup Kalamata olives halved
  • 1/4 cup red onion thinly sliced
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions
 

  • Combine chickpeas, cucumber, bell pepper, olives, red onion, and parsley in a large bowl.
  • Whisk together the olive oil, lemon juice, oregano, salt, and pepper in a small bowl to create the dressing.
  • Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
