No-Bake Shark Attack Cheesecakes with Gummy Sharks

These no-bake Shark Attack Cheesecakes feature a buttery cookie crust, creamy cheesecake filling, bright blue ocean gelatin, and gummy sharks. Served in individual cups, they are perfect for Shark Week, kids’ parties, summer celebrations, and under-the-sea dessert tables.

Ingredients
  

For the Cookie Crust

  • 150 g graham crackers or vanilla cookies finely crushed.
  • 60 g unsalted butter melted.
  • 1 tablespoon granulated sugar optional.
  • Pinch of salt optional.

For the Cheesecake Filling

  • 225 g cream cheese softened.
  • 60 g powdered sugar.
  • 1 teaspoon vanilla extract.
  • 240 ml cold heavy cream.
  • 1 tablespoon lemon juice optional.

For the Blue Ocean Layer

  • 1 packet blue gelatin or blue Jell-O.
  • 240 ml boiling water.
  • 120 ml cold water.
  • 2 –3 drops blue gel food coloring optional.

For Decoration

  • 8 gummy sharks.
  • Blue and white sprinkles.
  • Edible pearls optional.
  • Candy seashells optional.
  • Crushed graham crackers for edible sand.
  • Whipped cream optional.

Instructions
 

  • Crush the graham crackers or vanilla cookies until they resemble fine crumbs.
  • Combine the crumbs with the melted butter, sugar, and salt until the mixture resembles damp sand.
  • Divide the crust mixture between eight dessert cups. Press it firmly into the bottom of each cup.
  • Refrigerate the cups while preparing the cheesecake filling.
  • Beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy.
  • In a separate bowl, whip the cold heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until evenly combined.
  • Spoon or pipe the cheesecake filling over the chilled cookie crusts.
  • Prepare the blue gelatin by dissolving it in the boiling water. Stir in the cold water and optional blue food coloring.
  • Allow the gelatin mixture to cool until it is no longer hot but remains liquid.
  • Carefully pour a thin layer of blue gelatin over each cheesecake.
  • Cover the dessert cups and refrigerate for at least 4 hours, or until the layers are firm.
  • Just before serving, decorate each cheesecake with a gummy shark, blue and white sprinkles, edible pearls, candy seashells, or whipped cream.
  • Add crushed graham crackers around the gummy shark to create an edible sand effect.
  • Serve the cheesecakes chilled.

Notes

Prepare the cheesecakes up to 2 days in advance and keep them covered in the refrigerator. Add gummy sharks, whipped cream, and crunchy decorations shortly before serving for the best texture and appearance.
