Instructions
Crush the graham crackers or vanilla cookies until they resemble fine crumbs.
Combine the crumbs with the melted butter, sugar, and salt until the mixture resembles damp sand.
Divide the crust mixture between eight dessert cups. Press it firmly into the bottom of each cup.
Refrigerate the cups while preparing the cheesecake filling.
Beat the softened cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy.
In a separate bowl, whip the cold heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture until evenly combined.
Spoon or pipe the cheesecake filling over the chilled cookie crusts.
Prepare the blue gelatin by dissolving it in the boiling water. Stir in the cold water and optional blue food coloring.
Allow the gelatin mixture to cool until it is no longer hot but remains liquid.
Carefully pour a thin layer of blue gelatin over each cheesecake.
Cover the dessert cups and refrigerate for at least 4 hours, or until the layers are firm.
Just before serving, decorate each cheesecake with a gummy shark, blue and white sprinkles, edible pearls, candy seashells, or whipped cream.
Add crushed graham crackers around the gummy shark to create an edible sand effect.
Serve the cheesecakes chilled.
Notes
Prepare the cheesecakes up to 2 days in advance and keep them covered in the refrigerator. Add gummy sharks, whipped cream, and crunchy decorations shortly before serving for the best texture and appearance.
