One-pan garlic potatoes & asparagus roasts baby potatoes and fresh asparagus spears together with garlic, lemon, and Parmesan for crispy, flavorful weeknight perfection. Ready in 30 minutes with 5 minutes prep!

- 1½ lbs baby potatoes halved
- 1 lb asparagus spears tough ends trimmed
- 6 cloves garlic smashed
- ¼ cup extra virgin olive oil divided
- 1½ tsp kosher salt divided
- ¾ tsp black pepper divided
- Zest and juice of 1 lemon
- ⅓ cup fresh grated Parmesan cheese
- 2 tbsp fresh parsley chopped
Preheat oven 425°F (220°C). Line sheet pan with parchment.
Toss halved potatoes with 2 tbsp oil, 4 garlic cloves, 1 tsp salt, ½ tsp pepper. Spread cut-side down.
Roast 15 minutes. Push to sides.
Toss asparagus with 2 tbsp oil, remaining salt/pepper. Add to center.
Roast 12-15 minutes until tender.
Zest lemon over veggies, squeeze juice, sprinkle Parmesan and parsley.
Broil 1-2 minutes for crispy top. Serve immediately.
