One-pan garlic potatoes & asparagus roasts baby potatoes and fresh asparagus spears together with garlic, lemon, and Parmesan for crispy, flavorful weeknight perfection. Ready in 30 minutes with 5 minutes prep!

Ingredients
  

  • lbs baby potatoes halved
  • 1 lb asparagus spears tough ends trimmed
  • 6 cloves garlic smashed
  • ¼ cup extra virgin olive oil divided
  • tsp kosher salt divided
  • ¾ tsp black pepper divided
  • Zest and juice of 1 lemon
  • cup fresh grated Parmesan cheese
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven 425°F (220°C). Line sheet pan with parchment.
  • Toss halved potatoes with 2 tbsp oil, 4 garlic cloves, 1 tsp salt, ½ tsp pepper. Spread cut-side down.
  • Roast 15 minutes. Push to sides.
  • Toss asparagus with 2 tbsp oil, remaining salt/pepper. Add to center.
  • Roast 12-15 minutes until tender.
  • Zest lemon over veggies, squeeze juice, sprinkle Parmesan and parsley.
  • Broil 1-2 minutes for crispy top. Serve immediately.
