- 2 cups pancake mix
- 1 ½ cups milk
- 2 large eggs
- 2 tablespoons maple syrup plus more for serving
- 1 teaspoon vanilla extract optional
- ½ teaspoon cinnamon optional
- Cooking spray or butter for greasing the dish
Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
Cook the breakfast sausage in a skillet over medium heat until fully browned. Drain excess grease and set aside.
In a large bowl, whisk together the pancake mix, milk, eggs, maple syrup, vanilla extract, and cinnamon until smooth.
Spread the cooked sausage evenly in the prepared baking dish.
Pour the pancake batter over the sausage, spreading evenly.
