Ingredients
  

  • 1 lb breakfast sausage
  • 2 cups pancake mix
  • 1 ½ cups milk
  • 2 large eggs
  • 2 tablespoons maple syrup plus more for serving
  • 1 teaspoon vanilla extract optional
  • ½ teaspoon cinnamon optional
  • Cooking spray or butter for greasing the dish

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  • Cook the breakfast sausage in a skillet over medium heat until fully browned. Drain excess grease and set aside.
  • In a large bowl, whisk together the pancake mix, milk, eggs, maple syrup, vanilla extract, and cinnamon until smooth.
  • Spread the cooked sausage evenly in the prepared baking dish.
  • Pour the pancake batter over the sausage, spreading evenly.
  • Bake for 30–35 minutes, or until the top is golden and a toothpick inserted in the center comes out clean.
  • Let cool for 5 minutes before slicing. Serve warm with extra maple syrup if desired.
