Ingredients

  • 3 tablespoons unsalted butter
  • 10 ounces mini marshmallows
  • Orange food coloring as needed
  • 6 cups crispy rice cereal
  • 12 small Tootsie Roll pieces or short pretzel-stick pieces for stems
  • Green candy melts green frosting, or green gumdrops, optional, for leaves
  • Chocolate candy melts or decorating icing optional, for faces
  • Nonstick cooking spray or butter for shaping

Instructions

  • Lightly grease a large baking sheet or piece of parchment paper. Spray your hands or rub them lightly with butter.
  • Melt the butter in a large pot over low heat. Add the mini marshmallows and stir until melted and smooth. Remove from the heat.
  • Stir in orange food coloring until the marshmallow mixture reaches your preferred pumpkin color.
  • Add the crispy rice cereal and fold until evenly coated.
  • Working while the mixture is warm, portion it into 12 pieces and gently roll each piece into a ball. Place on the prepared sheet.
  • Press a Tootsie Roll piece or short pretzel stick into the top of each pumpkin as a stem.
  • Add green leaves and jack-o’-lantern faces, if desired. Let the pumpkins cool completely before serving or packaging.

Notes

  • Keep the heat low while melting marshmallows for soft, tender treats.
  • Grease hands and tools to make shaping much easier.
  • Store in an airtight container at room temperature for up to 3 days.
