Ingredients
  

For the Chicken & Marinade:

  • 500 g boneless skinless chicken thighs or breasts, sliced thinly
  • 2 tbsp soy sauce
  • 1 tsp oyster sauce
  • 1 tsp cornstarch
  • 1 tsp freshly ground black pepper
  • 1 tsp sesame oil optional

For the Stir-Fry:

  • 1 tbsp vegetable oil
  • 3 cloves garlic minced
  • ½ onion thinly sliced
  • ½ green bell pepper julienned (optional)
  • 1 tbsp soy sauce for stir-fry
  • ½ tsp sugar optional, to balance spice
  • 1 –2 tbsp water or chicken broth if needed

For Garnish:

  • 1 tbsp chopped green onions
  • ½ tsp toasted sesame seeds optional
  • Extra black pepper to taste

Instructions
 

Marinate the Chicken:

  • In a bowl, combine the chicken slices with soy sauce, oyster sauce, cornstarch, black pepper, and sesame oil. Mix well and let it marinate for 15–20 minutes.

Prepare the Aromatics:

  • While the chicken marinates, mince the garlic and slice the onions and bell pepper.

Sauté Aromatics:

  • Heat oil in a large skillet or wok over medium-high heat. Add garlic and onion. Stir-fry for 1–2 minutes until fragrant. Add bell pepper (if using) and stir-fry briefly.

Cook the Chicken:

  • Add marinated chicken to the pan in a single layer. Sear for 2 minutes undisturbed, then stir-fry until fully cooked and slightly caramelized (about 4–5 minutes).

Season and Finish:

  • Add 1 tbsp soy sauce, sugar (if using), and a splash of water or broth if the pan is too dry. Let simmer for 1–2 minutes to thicken the sauce slightly.

Garnish and Serve:

  • Turn off heat and garnish with chopped green onions, sesame seeds, and extra black pepper. Serve hot over steamed rice or noodles.
