Slow Cooker French Onion Beef Soup with Melted Cheese

Ingredients
  

  • 2 pounds beef chuck roast or stew meat.
  • 5 large yellow onions thinly sliced.
  • 4 tablespoons unsalted butter.
  • 4 garlic cloves minced.
  • 6 cups low-sodium beef broth.
  • cup dry sherry or additional broth.
  • 1 tablespoon Worcestershire sauce.
  • 1 teaspoon dried thyme.
  • 1 bay leaf.
  • 1 teaspoon salt.
  • ½ teaspoon black pepper.
  • 6 baguette slices toasted.
  • –2 cups shredded Gruyère or Swiss cheese.

Instructions
 

  • Cook onions in butter for 20–30 minutes until softened and golden.
  • Season and brown the beef.
  • Add onions and beef to the slow cooker.
  • Add garlic, broth, sherry, Worcestershire sauce, thyme, bay leaf, salt, and pepper.
  • Cook on LOW for 7–8 hours.
  • Shred the beef and return it to the soup.
  • Top servings with toast and cheese, then broil until bubbling.
