- 3 large sweet potatoes peeled and diced
- 2 cans 15 oz each chickpeas, drained and rinsed
- 1 large onion diced
- 3 cloves garlic minced
- 2 carrots diced
- 2 celery stalks diced
- 6 cups vegetable broth
- 1 can 13.5 oz coconut milk
- 2 teaspoons ground cumin
- 1 teaspoon ground coriander
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- 4 cups fresh spinach
- Salt and pepper to taste
- Fresh cilantro for garnish
Add sweet potatoes, chickpeas, onion, garlic, carrots, celery, vegetable broth, cumin, coriander, smoked paprika, thyme, salt, and pepper to the slow cooker. Stir well.
Cover and cook on low for 6-8 hours or on high for 3-4 hours, until vegetables are tender.
Use an immersion blender to partially blend the soup, leaving some chunks for texture.
Stir in coconut milk and fresh spinach. Cook for 10 more minutes until spinach wilts.
Taste and adjust seasoning. Serve hot with fresh cilantro.
