Smothered Green Beans with Potatoes

Classic Southern side dish with tender green beans, creamy potatoes, and smoky bacon or sausage. One-pot comfort food at its best.

- 2 pounds fresh green beans trimmed
- 1 pound baby potatoes
- 8 slices bacon or 1 pound smoked sausage
- 1 onion diced
- 4 cloves garlic minced
- 4 cups chicken broth
- 2 tablespoons olive oil
- Salt and pepper to taste
- Red pepper flakes optional
Cook bacon in a large pot until crispy. Remove and set aside, leaving fat in pot.
Add onion to pot and cook until softened, 5 minutes. Add garlic and cook 30 seconds.
Add green beans and potatoes to pot. Pour in chicken broth to almost cover.
Bring to boil, then reduce heat to low. Cover and simmer 45-60 minutes until tender.
Chop cooked bacon and add back to pot (or add sliced smoked sausage).
Season with salt, pepper, and red pepper flakes to taste.
Serve hot with cornbread or over rice.
