Ingredients
  

Pasta Salad

  • 12 ounces rotini pasta or another short pasta shape
  • 8 ounces bacon
  • 1 cup dill pickles finely chopped
  • 1 cup sharp cheddar cheese cut into small cubes
  • ½ cup red onion finely diced
  • 2 tablespoons fresh dill chopped
  • ¼ cup pickle juice for extra flavor if desired

Creamy Pickle Dressing

  • ½ cup mayonnaise
  • ½ cup plain Greek yogurt
  • ¼ cup dill pickle juice
  • 1 tablespoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ¼ teaspoon black pepper
  • Salt to taste

Instructions
 

  • Bring a large pot of salted water to a boil. Cook the pasta according to the package directions until al dente.
  • Drain the pasta thoroughly, then rinse it under cold water until completely cool. Set it aside to drain well.
  • Cook the bacon in a skillet or oven until crisp. Transfer it to a paper towel-lined plate, let it cool, and chop it into small pieces.
  • While the pasta and bacon cool, chop the dill pickles, cheddar cheese, red onion, and fresh dill.
  • In a medium bowl, whisk together the mayonnaise, Greek yogurt, pickle juice, Dijon mustard, garlic powder, onion powder, and black pepper.
  • Taste the dressing and add salt only if needed. The bacon, pickles, and cheddar may already provide enough salt.
  • Add the cooled pasta, chopped pickles, bacon, cheddar cheese, red onion, and fresh dill to a large mixing bowl.
  • Pour the creamy pickle dressing over the ingredients. Gently fold everything together until the pasta is evenly coated.
  • Cover the bowl and refrigerate the pasta salad for at least 30 minutes so the flavors can blend.
  • Stir gently before serving. Add a little extra pickle juice or dressing if the salad appears dry.
  • Garnish with reserved bacon, fresh dill, chopped pickles, or extra cheddar cheese.

Notes

  • Use rotini, bow tie pasta, elbow macaroni, or small shells.
  • Cook the pasta until al dente to prevent a mushy texture.
  • For extra protein, use high-protein pasta or add diced grilled chicken or chopped boiled eggs.
  • For a lighter dressing, replace more of the mayonnaise with Greek yogurt.
  • Add the reserved bacon just before serving to keep it crisp.
  • Store leftovers in an airtight container in the refrigerator.
  • Best served chilled as a summer lunch, picnic recipe, barbecue side dish, or potluck salad.
