This keto baked Brie is a creamy, warm, and flavorful low-carb appetizer topped with buttery pecans, sugar-free maple syrup, cinnamon, and fresh rosemary. It is easy to prepare and perfect for holidays, dinner parties, cheese boards, and entertaining.

Ingredients
  

  • 1 wheel Brie cheese approximately 8–9 ounces
  • cup chopped pecans
  • 1 tablespoon unsalted butter
  • 2 tablespoons sugar-free maple syrup
  • 1 tablespoon low-carb brown sweetener
  • ¼ teaspoon ground cinnamon
  • 1 teaspoon fresh rosemary finely chopped, optional
  • Pinch of sea salt

Instructions
 

  • Preheat the oven to 350°F, or 175°C. Line a small baking dish or baking sheet with parchment paper.
  • Unwrap the Brie and place it in the prepared oven-safe dish. Leave the rind on.
  • Melt the butter in a small skillet over medium heat.
  • Add the chopped pecans and toast for 2–3 minutes, stirring frequently.
  • Add the sugar-free maple syrup, low-carb brown sweetener, cinnamon, rosemary, and sea salt.
  • Stir until the pecans are evenly coated, then remove the skillet from the heat.
  • Spoon the pecan mixture over the top of the Brie.
  • Bake for 12–15 minutes, or until the center of the Brie becomes soft and creamy.
  • Remove from the oven and allow the Brie to rest for 1–2 minutes.
  • Serve warm with keto crackers, cucumber slices, celery sticks, bell pepper strips, or other low-carb dippers.

Notes

  • Keep the Brie rind on while baking to help the cheese maintain its shape.
  • Avoid overbaking, as the cheese may melt completely and spread across the dish.
  • You can replace the pecans with walnuts, almonds, or macadamia nuts.
  • For a savory version, omit the sweetener and add garlic, thyme, black pepper, or olive oil.
  • Check the labels of your sugar-free maple syrup and sweetener for their carbohydrate content.
