- 3 lbs about 1.4 kg sweet potatoes or yams, peeled and sliced into ½‑inch rounds
- ½ cup 115 g unsalted butter
- ¾ cup 150 g packed brown sugar (light or dark)
- ¼ cup 50 g granulated sugar
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ¼ tsp ground allspice optional
- ¼ tsp ground cloves optional
- ¼ tsp salt
- 2 tbsp orange juice or water
- 1 tsp vanilla extract
- 1 –2 tbsp bourbon or rum optional
- ½ cup chopped pecans or walnuts optional
- 1½ cups mini marshmallows optional
Preheat oven and prepare dish
Make the glaze
In a medium saucepan over medium heat, combine butter, brown sugar, granulated sugar, cinnamon, nutmeg, allspice, cloves (if using), salt, and orange juice. Stir constantly until butter melts and sugars dissolve. Bring to a gentle boil, then remove from heat and stir in vanilla extract (and bourbon, if using).
