Ingrédients

  • Rice Bubbles: The crispy rice bubbles add a light crunch and give the slice its iconic texture.
  • Shredded Coconut: Coconut provides a tropical touch balancing out the sweetness and adding a lovely chewiness to the slice.
  • White Chocolate or Copha: Traditionally Copha, a type of vegetable shortening, is used in this recipe to bind the ingredients. However, white chocolate is a delicious and creamy alternative that adds an extra layer of flavor.
  • Dried Fruits: Glacé cherries sultanas, or cranberries add pops of color and sweetness that perfectly complement the creamy white chocolate and coconut.
  • Powdered Sugar: A little powdered sugar helps sweeten the mix and keeps it soft and delicate.
  • Vanilla Extract: This enhances the flavor and gives the slice a warm aromatic touch.

Instructions

  • Step 1: Prepare Your Ingredients
  • Before you begin, measure out your ingredients. This will make the process smooth and ensure you have everything ready. Finely chop any dried fruits, especially if they are large, so they evenly distribute throughout the mixture.
  • Step 2: Melt the White Chocolate or Copha
  • If you’re using white chocolate, break it into pieces and melt it in a heatproof bowl over a pot of simmering water. Stir gently to avoid burning, and once it’s melted, remove it from the heat. For a traditional White Christmas recipe, melt the Copha instead by placing it in a saucepan over low heat.
  • Step 3: Mix the Ingredients

  • Combine the rice bubbles, shredded coconut, dried fruits, and powdered sugar in a large bowl. Pour in the melted white chocolate (or Copha), and add a splash of vanilla extract. Mix slowly until all the ingredients are unity.
  • Step 4: Press it
  • Line a baking pan with parchment paper, then pour in the mixture. Press it down firmly with a spatula to ensure an even layer.
  • Step 5: Chill the White Christmas Slice
  • Put the pan in the freezer and let it chill for 2 hours, or until it’s strong and easy to cut. This chilling time allows the ingredients to bind together and makes slicing cleaner and easier.
  • Step 6: Slice and Serve
  • Once chilled, remove the White Christmas slice from the pan and cut it into squares or rectangles. Serve it on a festive platter, or wrap pieces in cellophane bags to give as holiday gifts.
