Maple Glazed Apple Blondies

Ingredients
  

For the blondies

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter (softened)
  • 1/4 cup sugar
  • 1 cup dark brown sugar
  • 2 large eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 2 large apples (chopped finely)

For the apple filling

  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • 1/2 tsp vanilla extract
  • 1/2 tsp cinnamon

For the maple glaze

  • 2 Tbsp butter (melted)
  • 1/4 cup pure maple syrup
  • 1/2 cup powdered sugar
  • 1/4 tsp vanilla extract
  • 1/8 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line an 11x7 inch pan with tin foil or spray it with cooking spray.
  • In a small bowl, mix the chopped apples, 2 Tbsp brown sugar, 1 Tbsp butter, 1/2 tsp vanilla extract, and 1/2 tsp cinnamon. Set aside.

Blondies

  • In a large bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream together the softened butter, 1/4 cup sugar, and dark brown sugar until smooth.
  • Add the eggs, 1 1/2 tsp vanilla extract, and 1/2 tsp cinnamon to the butter mixture. Mix well.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  • Fold in the apple filling mixture.
  • Pour the batter into the prepared pan and spread evenly. Bake for 25-30 minutes or until golden brown and a toothpick inserted in the center comes out clean. Let cool completely.

Maple Glaze

  • In a small bowl, whisk together 2 Tbsp melted butter, maple syrup, powdered sugar, 1/4 tsp vanilla extract, and 1/8 tsp ground cinnamon. Drizzle over the cooled blondies.

Notes

Store any leftover blondies in an airtight container at room temperature for up to three days. For longer storage, refrigerate but allow them to come to room temperature before serving. Ensure your butter is softened for easier mixing.
