Ingredients
  

  • 4 boneless skinless chicken breasts
  • 1 cup chicken broth
  • 1/4 cup lemon juice
  • 2 teaspoons dried thyme
  • 2 teaspoons dried basil
  • 1 tablespoon garlic minced
  • 1 onion chopped
  • Salt and pepper to taste
  • 2 cups cooked rice
  • Fresh parsley for garnish

Instructions
 

  • Place the chicken breasts in the slow cooker.
  • In a separate bowl, mix the chicken broth, lemon juice, thyme, basil, garlic, onion, salt, and pepper.
  • Pour the mixture over the chicken in the slow cooker.
  • Cover and cook on low for 6-7 hours or high for 3-4 hours, until the chicken is cooked through.
  • Remove the chicken and shred it with two forks.
  • Return the shredded chicken to the slow cooker and stir to combine with the sauce.
  • Serve over fluffy cooked rice and garnish with fresh parsley.
